[MonoTouch] How about using Visual Studio with MonoTouch?

Visual Studio doesn't run on Wine yet (and it likely won't run any
time soon). Your best bet is a virtual machine set up with shared
folders.

I'd recommend http://www.virtualbox.org/, as it is free and works great!
