[MonoTouch] Monotouch 2.8, Snow Leopard, XCode4.1 iPhoneSDK not installed

Hi everyone,
I am having some serious problems with Monodevelop 2.8
I currently have a fresh install of OSX Snow Leopard.
Following the guide located here
http://docs.xamarin.com/ios/getting_started/installation
http://docs.xamarin.com/ios/getting_started/installation  I then installed
the following in the following Order...

XCode 4.1 For Snow Leopard
MonoFramework-MDK-2.10.5_0
MonoDevelop-2.8.0
monotouch-eval-4-1.2.2

Everything seems to be fine, but when I try to debug ANY code, I get the
following Build Error message.
The Apple iPhone SDK is not installed.

Obviously there is something very simple that I am missing here, but I am
scratching my head as to determine what it is....


A little bit of background.....
Like some people here, I recently upgraded from Monodevelop 2.6 to 2.8.
This then asked my to upgrade my projects, which worked fine....
I could compile and run projects fine.
But when I tried to add any new interfaces using interface builder, nothing
would work...
So I googled and noticed I needed to be running XCode 4
So I updated to XCode 4, and ran in to a whole heap of problems.....
Because I am on a tight deadline, I just formatted and re-installed from
scratch, which is where I am up to now....

Any, and I mean ANY help on this would be appreciated !!!!
