The easiest would probably be to install everything again. Most of the bits
are system-wide, so you won't use more disk-space.
Your MonoTouch license is per-machine, so this wouldn't be a problem.

I think the current procedure is to open Xcode's Organizer, find your
device in the tree view on the left, and click on the "Use this device for
development" button.
