[MonoTouch] install ios 4 sdk without uninstalling iOS 5

you use the iOS5 SDK, but just dont use the 5.0 functions, and the
resulting app works on 4.x. And yes, you have to have old devices to
test on, with old versions of the OS. iPod Touch is very handy for
this, along with eBay :)

I have an iOS5 SDK app which works right back to 3.0. I think. I only
test on 3.1.3 or higher.
