[Mono-osx] How do I make or obtain .dSym files when using MonoDevelop or XamarinStudio?

Context: I am a windows developer porting an XNA app to MonoGame on MacOSx.
Hence I'm using MonoDevelop.

I have been looking for the .dSym files that go with my code.
I need the .dSym files so that I can use "Instruments" to profile the app.
The .dSym files allow the "Instruments" profiler to "Symbolicate" the stack
codes.  
(At the moment "Instruments" is only showing hex number codes instead of my
function names.)
If there was a way of translating these codes myself, that would also be a
helpful alternative.

I am building my project using MonoDevelop 3.0.4.7 (I also tried
XamarinStudio 4.0.3 build 13).
In the bin directory I can see the .exe file and the .exe.mdb files, but no
.dSym files

I also tried using right-click and "Show Package Contents" on the
Application file.
I read somewhere that .dSym files would be there within the contents of the
application,
but in my case they are not there.

Also according to this document:

the Mono CSDK pkg now contains.
But how do I make a CSDK pkg?
