Thanks to an entry on Dallas Hoockley's blog (http://www.hockley.ca/Blog/page1.html) I was able to get Nant working properly. Apparently if you put /Library/Frameworks/Mono.framework/Commands on your path before anything else (like similarly named Fink commands) all is well.
