I agree with you, one unique channel would fit to me perfectly.

The only advantages I see of having multiple channels is when you 
imagine that many people would be interested in some channels, but not 
all of them. And I suppose that every mono developer won't bother having 
installed all channels that you have mentioned, I don't figure a reason 
or requirement for installing only some of them (perhaps one person that 
doesn't have Gnome installed and uses wx.NET as graphic library, and 
doesn't want to install any GTK stuff?).
