I'm experimenting with Cairo too, and you're right, there is no 
documentation at all. I'm trying to use Cairo with Gtk#, but the problem 
is that, apparently, a GtkCairo binding for Mono is missing, so, I'm 
using PInvoke for doing Gtk# and Mono.Cairo interaction. If you want, I 
can give you all my experiments and examples.
