You printer needs to support AirPrint for it to show up.  The easiest way to to
simulate a printer is to use the Printer Simulator.  You can launch it from
within the iOS Simulator.  Any iPads on the same network as your computer will
then see the printer simulator as a valid printer.  When you print from the
device, it will actually just generate a PDF on your local development machine
that you can use to validate that the results were correct.
